Last Sunday I cooked a more traditional dinner for over 30 guests (more to be written soon) and one of the Greek classics that was enjoyed was Chicken Avgolemono Soup. This soup is our panacea for the common cold. It?s Greek comfort food and anytime I?m feeling a cold coming on, I have Avgolemono soup.

This soup means Egg/Lemon soup (Avgolemono) and it?s made by slowly adding hot stock into a bowl of vigorously whisked eggs & lemon juice so that you don?t end up with scrambled eggs. The slow tempering of hot liquid into the egg/lemon mixture prevents the scrambled egg disaster from occurring.

My family prefers using Fide or vermicelli noodles but rice is more commonly made by Greeks. Aalways, the key to a great soup is using homemade stock. Leftover chicken or turkey carcasses make for good stocks or you can ask your butcher for chicken carcasses and use those.

After you?ve made your own stock, this soup is very easy and the only twist(s) I?ve added is to add some finely diced celery and carrots along with some chopped kale to life the dish?s presentation and add more goodness.

If you?re patient and slowly add the hot soup into your egg/lemon mixture, you have no worries and you?ll have made your very own Greek comfort in? bowl ? Chicken Avgolemono Soup.

Avgolemono Soup With Chicken, Rice & Kale

10 cups of Chicken or Turkey Stock
1/4 cup finely diced celery

1/4 cup finely diced carrot

1/4 cup Arborio/Carolina rice

chicken meat harvested from chicken/turkey carcasses
salt to taste

1/4 cup Cookin? Greens chopped kale

Avgolemeno

2 eggs
juice of 1 lemon

  1. Bring your stock to a boil. Once it?s boiling, add the celery, carrots, rice into the boiling stock. Boil for 10 minutes and turn off the heat. Start making your Avgolemeno by adding your eggs and lemon juice in a big bowl and whisk them together.
  2. Take the pot of soup off the element. While whisking, s-l-o-w-l-y add one ladle at a time of the soup to the Avgolemeno mixture (bout 4-5 ladles) to temper the heat of the Agvolemeno).
  3. Add the contents of of the bowl back into the soup and stir in the reserved chicken meat and chopped kale.? Let the soup rest for about 5 minutes.
  4. Adjust seasoning with salt and serve with cracked black pepper,? crackers or homemade bread.

Google plans to fix an Android networking bug... after 2.5 years

HTC Desire review conclusion

It's fair to say that some bugs take awhile to fix, and a public schedule isn't always an option; HTC knows this well. Still, Google may be pushing the limits with the solution for a longstanding Android bug that prevents resolving hostnames on some WiFi networks without using the full domain. The company has officially committed to providing a patch -- 2 years, 6 months and 23 days after the bug was first reported on April 29th, 2010. Google explains that the "next major release" after Android 4.2 should hold the remedy, and claims that a mix of "prioritization and resources" prevented the team from sorting things out between Android 2.1 and now. We'll take Google's word for it, although the vow won't be much comfort for anyone who's still holding on to that original HTC Desire and can't upgrade. At least the Mountain View team won't have to deal with any 17-year-old security flaws.

Right now a lot of you may be on the road, staring contently out the window, down at the white laser that shifts slightly as it contours and sidelines the paved miles. A backdrop of trees and hillsides smear together from the speed of the highway. In the rear seat, the kids finger scroll on a phone or pluck away with their thumbs on a hand-held game. The silence of the road, the droll hum of rubber speeding on asphalt, offers a welcome respite from what?s behind you. Everyone needs a break.

Ahead through the windshield, somewhere up there, your family is hurrying to prepare for you, running errands, searching for the right pot and double checking for spots on the good silverware. Someone is fumbling with the legs of the kids? table. Next year there?ll be a new one. The thoughts make you smile as the underpasses pass overhead and the whole scene gets closer with every green highway sign.

Thanksgiving, thankfully, is the good holiday, the one that sells the least amount of home decor and isn?t measured by the depth of the wrapping paper pile. We can?t let discounts and two-for-ones take over the one holiday that?s still, really, about family, the one that?s centered on togetherness.

We hope your trip to be with family is a great one. We hope you?re looking forward to somber naps and coffee after dinner with friends or people you haven?t seen since you had coffee with them last year. It?s the small moments that make the big holidays. Stay warm, make it special.

Just another couple of turns now. There?s their street, it looks like the neighbors repainted. The crowded driveway is a welcome sight. A child appears in the doorframe, her hand on the knob, the other gripping a doll?s arm.

This is what you?re thankful for.

A Minute With: Guillermo del Toro on "Rise of the Guardians"

LOS ANGELES (Reuters) - Mexican filmmaker Guillermo del Toro is known for putting a dark twist on super heroes and children's fantasy, but in "Rise of the Guardians" the producer brings together holiday heroes for a festive adventure.

"Rise of the Guardians," which will be in theaters on Friday, is based on award-winning author William Joyce's "The Guardians of Childhood" books. In the film, traditional characters such as Santa Claus, Easter Bunny, Tooth Fairy, Sandman and Jack Frost join forces to save earth's children from the evil Pitch Black and his band of Nightmares.

In the movie that stars Chris Pine, Alec Baldwin, Jude Law, Isla Fisher and Hugh Jackman, del Toro, 48, steps back into the executive producer role after directing dark fantasy "Pan's Labyrinth" and the "Hellboy" superhero franchise.

He spoke to Reuters about putting his own stamp on beloved holiday heroes, and why children's films are important to him.

Q: In "Rise of the Guardians," Santa has tattoos, the Easter Bunny is Australian and the Tooth Fairy is half-human, half bird. Not the way most of us grew up imagining them, is it?

A: "We didn't want the characters to have the affections that are given to them in certain cultures. We didn't want to go with the safe Easter Bunny that is now a marketing tool ... We wanted them to represent the world and to geographically make sense. Where would a burrower live, the Outback? The original incarnation of Santa is almost that of a hunter and wild man. It comes from the Nordic and Eastern European notions so we thought it would be great to make him Slavic."

Q: The film is about addressing fear, which is always a challenging lesson for parents to teach their children. Why make this the central theme?

A: "In order to address fear, parents always end up tiptoeing around the subject. Shielding our kids is not the way to go, but you also don't want to send them out unprepared without a healthy sense of self. I thought the movie was a great analogy to many things. It's a great metaphor for kids to interpret the world."

Q: What attracts you to the children's genre?

A: "Some of my favorite authors in literature are guys that are great portrayers of childhood, but not necessarily childish - Mark Twain, Charles Dickens, Roald Dahl. And my movies like 'Hellboy' and 'Hellboy 2' are about misfits coming together. Same with my Spanish movie 'The Devil's Backbone.' So this movie is thematically very much within what I like to do.

"I think that for good or for bad, we spend the rest of our lives dealing with our first 13 years of life, trying to remedy or be lifted by whatever tools we were given when we were kids. Those first years are when we, as adults, sculpt the character of our kids ... In reality, life puts kids in our lives for us to learn from them. There is no braver soul in the world than a kid."

Q: Which "Guardian" do you identify with the most?

A: "I identify with North (Santa Claus). I have the greatest blessing in my life, which is the capacity to remain a child in the way I like to see the world. Like every artist, I have turmoil and I suffer. But ultimately I am able to find magic in the world. When North declares those principles, when he says 'I feel it in my belly,' it's very much something I identify completely with."

Q: Can we expect to see more of this band of heroes in future films?

A: "Obviously the possibility of telling another tale is completely dependent on the studio. But Bill Joyce has written many books on the characters and we are on board to create more and more adventures for them. We've been talking about some storylines. I am eager to tell everyone the story of North."

Q: You recently finished shooting sci-fi adventure "Pacific Rim," due in theaters in 2013, which is your first directing venture since 2008's "Hellboy II: The Golden Army." Why the break?

A: "I went to New Zealand to direct 'The Hobbit' and I was there for two years. I co-wrote the script, and at the end of the process there was a moment of decision where I really wanted to pursue something else and not keep waiting ('The Hobbit' production was delayed due to movie studio MGM's financial troubles).

"Then I spent over a year trying to get a movie called 'Mountains of Madness' off the ground. That didn't happen. Next it took another two years to get 'Pacific Rim' to the screen. But in the meantime, I co-wrote three novels, produced three movies and wrote a TV series. It's been a very busy five years."

Charles D'Angelo: Keeping It Healthy for the Holidays! | Ru1Fitness

Thanksgiving and the holidays are a time of plenty... too much plenty. We are encouraged to indulge, and even those who rarely indulge do so during this time. We start the afternoon with hors d'oeuvres, often pastries and deep-fried foods, with bowls of nuts and chips laid out on any surface possible! We move on to the main course -- appetizers, creamy mashed potatoes, candied sweet potatoes, turkey with gravy and stuffing, and then on to dessert: pumpkin pie with whipped cream, apple pie, ice cream and maybe a few other baked goods on top. And then there's the alcohol: beer in the afternoon, wine with dinner and liqueurs with dessert. What's more, this may be repeated once or twice over the weekend, depending on your family!

Perhaps it's human nature to celebrate bounty with excess, but that's left over from times when bounty was scarce. Times have changed, but this ritual seems to remain. If you spend 364 days of the year with barely enough to eat, then one day of celebratory excess does little harm. That, however, is not the case in the U.S. today. Since 70 percent of us are overweight or obese, it's pretty safe to assume most of us have more than enough to eat every single day... more than enough calories, at least. Foods that use to go in and out of season are available year round at every supermarket. For most of us, the problem is not in finding enough calories; our challenge is in finding ways to NOT eat too many of them. This is even more important when you are already transitioning to a weight-loss or healthy-eating program. I know, once weighing 360 pounds myself as a teen, how daunting this task may seem!

The holidays can be a challenging time to stay on course with our healthier diets, but this is not because the dinners have to be fattening; it's because we have our own expectations of what the holidays have to be -- full of fattening food. In order to come out on the other side of the holiday where we started it physically, we have to have the right mindset. In reality, our Thanksgiving and holidays can be just as enjoyable, or even more so, if we keep a few things in mind and make some promises to ourselves. Here are a few tips that have helped dozens of my clients to continue to move toward their goal and avoid complete sabotage on the big day!

1. Watch your language! Go into Thanksgiving and the holidays ready to succeed. Don't walk in with a wishy-washy attitude. If you say to yourself such weak things as "Well, I'll try to stay on my diet if I can," then you will cave when faced with goodies. Stop focusing on what you can't have, but on how great you feel having finally taken control of something you've struggled with most of your life.

2. Avoid the coma! Find healthy ways to cook your holiday meals. Turkey is a great choice, when it's cooked properly. Add some roasted vegetables and mashed sweet potato or squash along with some gravy made without too much fat, and you're good to go with a delicious Thanksgiving dinner without the food coma or the extra pounds. Keep Thanksgiving dinner to dinner -- not all day long! Coming from an Italian family, I remember my relatives starting to eat dinner foods at 8 a.m.!

3. Replace spontaneity with strategy! In my book Think and Grow Thin, I outline a meal plan that's helped people lose 50, 100, and even more than 200 pounds! A major key to my clients' success is that they have a plan. Be sure you are eating all of your "normal" meals on Thanksgiving so you don't end up leaving yourself vulnerable to hunger. Have some strategies ready and plan ahead so you're ready to take on temptation. Take control of the situation you're in by making a veggie platter so you don't feel at a loss when everyone else is indulging in puff pastries. Drink sparkling water with lime or lemon, or make a spritzer with a little pomegranate juice and sparkling water to feel more festive.

4. Refuel meal? In my book, each person who embarks on my program is entitled to a "refuel meal" -- one night per week wherein they can go off the reservation and recharge their body with healthy foods that aren't customary to their daily plan to allow for a physiological and psychological break. Decide ahead of time if this meal will be your refuel meal. Some people can allow themselves a small treat -- a glass of wine or a slice of pie -- and go right back on their healthy eating plans. For many people though, one taste of a "forbidden food" and it gets them started on the path to bingeing. It does you no good to allow yourself a treat when you know from past experience that treat will likely send you off the rails. If you don't know how you'll react, it's better to be safe and stick to your healthy foods. I recommend you treat it like any addiction and don't touch the drug!

5. Treadmill your way to the turkey. Start your day with some exercise. Go to the gym or for your run first thing in the morning. This is not to burn off calories so you can eat more later! It's to set the right course for the day. Starting your day right can help you continue along the right path. And while you're at it, why not add some activity to your traditions? Start a traditional afternoon walk with the family or a game of backyard football. Establishing new healthy traditions will not only help get you in shape, it will help keep future generations in shape too. Emotional affect is what leads a person to overindulge most often.

6. Are you lonesome tonight? Most important! Thanksgiving and the holidays are about being with those you love. You don't really get together to eat copious amounts of food; you get together to spend time with each other. Make your company the focus of your attention more than the food, and you will all end up happier. Loneliness is a feeling that can lead a person to shoveling food unconsciously down their throat in effort to fill the void. If you don't have family to spend the day with, call up a friend. Or even better, volunteer at a place where the less fortunate will gather. Life is about giving to others -- it will get you out of yourself and focused on what really is important in life.

How you choose to act on Thanksgiving can set the course for the next month, giving you a reason to stay strong or an excuse to give up! One day of overindulgence may not be too catastrophic, but stretch that day over a month or more and you may find yourself having to buy larger clothes come January. Once we start sliding, it gets easier to keep sliding deeper and deeper into the defeat whirlpool so many have found themselves in. Start your good holiday habits today and sooner than you know it you'll be wearing a new size to your Christmas party spending the evening answering questions from those who are amazed at how fabulous you look!

On Tuesday, the Partnership to Fight Chronic Disease (PFCD), in collaboration with WellPoint, held a Capitol Hill Briefing titled ?Partnerships in Health: Innovations in Care Delivery Models and the Role of Physician Incentives.? It was part of an ongoing effort to highlight barriers to effective prevention and management of chronic disease.

?

PFCD Policy Director Candace DeMatteis served as the moderator for the briefing. Much of the discussion was focused on identifying best practices and improving care coordination and delivery to ensure the best possible care and outcomes.

The first speaker, Kavita Patel, MD, Managing Director for Clinical Transformation and Delivery at the Engelberg Center for Health Care Reform at the Brookings Institution, stressed the importance of patient-centered medical homes and incentives for providers. She said that investment in patient-centered medical homes now will prevent trillions wasted later. Additionally, she emphasized the importance of incentives for providers, especially for primary care physicians whose salaries are much lower than specialists. These incentives will help providers ? especially primary care physicians ? make decisions that benefit their patients? outcomes and ultimately the broader health care system.

Ruth Raskas, VP of Clinical Health Policy at WellPoint, provided specific examples of how WellPoint has been a leader in implementing patient-centered medical homes. ?Our Patient-Centered Primary Care Program, based on our positive experience with Patient-Centered Medical Homes, encourages enhanced care coordination, information sharing and patient-centered care by all primary care physicians. We see this initiative as an essential part of prevention and wellness efforts that can ultimately improve overall health.? She also added that primary care physicians have played a significant role in coordinating wellness and prevention.

The final speaker was Director of Public Policy and Advocacy at GlaxoSmithKline (GSK) Jon Easter who spoke about new care models from the perspective of an employer. He posed the question, ?Why do we need a new delivery system?? His answer was that our current system is a reactive one ? built to treat a smaller and healthier population for acute conditions. What we need, though, is a system that is more proactive, sustainable and effective ? one that takes a coordinated and population based approach. Jon gave the example of GSK?s employees voluntarily enrolling in patient-centered medical homes as an add-on to their PPO plan.? Even though the program just started in January 2012, GSK employees have been very happy with the amount of attention they are receiving from their doctors and the personalized plans that they are creating with their doctors, which, in a short time, have demonstrated improved health outcomes.

The audience was engaged and given the time to ask questions. They were most interested in how patient-centered medical homes and incentives for providers could most effectively be implemented. There is no one solution to the nation?s health care crisis, and as such, this was just another event designed to highlight solutions to some of the problems our country is facing and also to share best practices. We?ll be interested to see the results from GSK?s newly implemented patient-centered medical homes and hope that their results will help move other companies in this direction.
